Baking with The Refillery

Below are two recipes for delicious savoury muffins using ingredients from The Refillery.

Let’s make SAVOURY MUFFINS!

HERBY VEGETABLE SAVOURY MUFFINS

2 cups flour
1 tbsp mixed herbs
1 tsp parsley
2 tbsp nutritional yeast
1 tbsp baking powder
Pinch of salt
1/2 cup olive oil

100g cubed vegan feta
cheese
2 grated zucchini
1 1/2 cups dairy-free milk
1/2 – 1 cup diced bell pepper

Mix all the dry ingredients (flour, herbs, nutritional yeast, baking powder, salt) together in a medium mixing bowl. Mix the wet ingredients (olive oil, feta, zucchini, milk and bell pepper) together in a large mixing bowl. Add the flour mix and gently fold it in by hand with a spatula. Spoon the mixture into a greased muffin tray. Bake in a preheated oven (180°C) for 30 – 40 minutes – until a knife comes out clean.

POLENTA SAVOURY MUFFINS

1 cup polenta
1 cup flour
1 tbsp baking powder
Pinch of salt
1/4 cup olive oil
1 tbsp za’atar spice

1/2 cup corn
1/2 cup diced cherry tomatoes
1 cup dairy-free milk
1 diced spring onion

Mix all the dry ingredients (polenta, flour, baking powder, salt, spice) together in a medium mixing bowl. Mix the wet ingredients (olive oil, corn, tomatoes, milk, spring onion) together in a large mixing bowl. Add the flour mix and gently fold it in by hand with a spatula. Spoon the mixture into a greased muffin tray. Bake in a preheated oven  180°C) for 30 – 40 minutes – until a knife comes out clean.
