Breakfast Carrot Muffins

Sometimes mornings are for a hot beverage and a fresh muffin and these are perfect! Not too sweet as they are sweetened with mild and delish vegan honey, and who doesn’t love the fruity addition?


  • 2 grated carrots,
  • 1 tbsp vanilla essence,
  • 1/3 cup vegan honey,
  • 1/3 cup vegetable oil,
  • 1/2 cup cake mix (dried fruit),
  • 2 cups flour,
  • 1 tbsp baking powder,
  • pinch of salt,
  • 1 cup plant-based milk


Add the dry ingredients to a medium sized mixing bowl. In another bowl, mix the wet ingredients. Mix the wet ingredients into the dry ingredients, stir until a smooth batter is formed. Spoon the mixture into a greased muffin tray. Bake in a preheated oven (180*C) for 20-30 minutes – until a knife comes out clean.
