Carrot Cake Biscuits

Wow! If you like delicious buttery biscuits or carrot cake – you will LOVE these! A combination to die for also perfect with a cuppa tea!
Ingredients:
- 50g dried currants
- 50g grated carrot
- 1 tbsp cinnamon
- 150g vegan butter
- 300g cake flour
- 100g coconut sugar
- pinch of salt
- 1 tsp bicarbonate of soda
- optional – 2 tbsp milk to help dough come together
- optional – cinnamon sugar to roll the cookies in before baking
Method:
Cream your butter and sugar together until fluffy. Stir in your carrots, and currants. Add all the dry ingredients and mix until a dough forms. Use some milk if the batter is too dry. Roll each cookie in cinnamon sugar before baking and flatten down with a fork. Bake for 15-16 minutes at 180°C.
