Cashew Nut Paella

I love a #MeatFreeMonday meal that is delicious, filling, fun to make and sometimes a bit of a show-stopper – and this was definitely all of that. Roasting the cashew nuts brought out their flavour beautifully and really made this dish amazing! You have to try this! It is a crowd pleaser for sure (even with non-vegans!!)

Ingredients:

  • 1/2 cup uncooked rice of choice
  • 1 1/2 cups vegan chicken stock
  • 130g raw cashew nuts
  • 3 tbsp olive oil
  • 1 large onion, diced
  • 1 tbsp fresh garlic
  • 1 tbsp smoked paprika
  • 2 vegan sausages (spicy) defrosted and diced
  • 1 cup frozen peas
  • 1 diced bell pepper, diced
  • 100g mushrooms, diced

Method:

Cook the rice in the stock until nearly done – when nearly cooked, add in the frozen peas to defrost. Set this to one side. Dry roast the cashew nuts until golden brown – watch them carefully to ensure they don’t burn. Set this to one side. In a large pan, add the oil and onions. Fry until translucent. Add in the garlic and paprika. Let this toast for a few minutes. Add in the beyond sausages. Let this fry off for 5 minutes. Add in the pepper and mushrooms. Fry until tender. Add in the rice mixture and mix well. Let this simmer for 5 minutes for the flavours to deepen. Stir in the roasted cashew nuts. Serve immediately with fresh lemon wedges and fresh parsley.
