Cheesy Stuffed Mushrooms

Who doesn’t love cheesy, flavourful stuffed mushrooms. Quick, easy and delicious! These make the perfect side to any dish, or have a few and make a meal out of it – #nojudement here friends.


  • 1 tbsp vegan butter
  • 1/4 diced white onion
  • dash garlic powder
  • 1 tbsp flour
  • 1/2 cup plant-based milk
  • 1/4 cup vegan parmesan cheese
  • pinch of mustard powder
  • 1 cup diced spinach
  • 6 sundried tomatoes – diced
  • 6 big portobello mushrooms


Add the butter to a small pan. Add in the onion and let fry until glossy. Add in the garlic powder and mix well. Add in the flour and make a paste in the pan. Stir in the milk. Once combined, whisk in the vegan parmesan cheese. Let this cook for around 5 minutes – continually stirring. Add in the mustard powder and stir well. Add in the spinach and the sundried tomatoes. Let the spinach wilt and the sauce thicken. Add this mixture into the mushrooms. Top with more cheese if you like. And grill until the mushrooms are soft and the cheese has melted on top. Yum.
