Chicken & Noodle Soup

I LOVE my soup. Soup is so comforting! But I like it thick. I like it chunky! And I like it filling, nutritious & delicious!
Ingredients:
- 3 tbsp oil
- 2 chopped onions
- 1 tbsp fresh garlic
- 3 medium carrots chopped
- 3 stalks celery chopped
- 250g vegan chicken fillets of your choice
- 2 tbsp maizena
- 1 cup pasta of choice
- 4 cups chicken stock (Ina Paarman chicken stock powder is vegan-friendly!) ** You can add in more stock if you don’t like your soup too thick
- 1 can coconut cream
Method:
Add in your oil & onions to a pan. Fry until glossy. Add in your carrots & celery and fry for a few minutes to soften the veg. Add in the garlic. Mix well. Add in your chicken and fry for 5 minutes. Add in the maizena and coat all your ingredients. Add in the stock & pasta and bring this to the boil. Let it simmer for around 20 minutes. Add in the coconut cream and boil for a further 10 minutes.
Serve with spring onions and croutons. Enjoy!
