Chocolate Chunk Muffins

Weekend bliss with these delicious muffins – think late breakfasts, frothy coffees and delicious warm muffins. Your breakfasts don’t need to be boring anymore or don’t think they can’t include any sweet treats – dark chocolate chunks are the perfect addition to these muffins. Warm and melty chocolate all you need on a weekend!
Ingredients:
- 1 1/2 cups flour
- 1 large banana mashed
- 1 tbsp vanilla essence
- 120ml almond milk
- 3 tbsp vegetable oil
- 1/4 cup sugar
- 1 tbsp baking powder
- pinch of salt
- 100g dark chocolate chunks
Method:
Add the dry ingredients to a medium sized mixing bowl. In another bowl, mix the wet ingredients. Mix the wet ingredients into the dry ingredients, stir until a smooth batter is formed. Spoon the mixture into a greased muffin tray. Bake in a preheated oven (180*C) for 20-30 minutes – until a knife comes out clean.
