Creamy Bacon & Tomato Pasta

Pasta is GREAT. Why? Because it’s so versatile.
There are a thousand and one pasta recipes, it goes with tomato, cream, veggies and it works wonders with any number of sauces, it can be sautĂ©ed or baked, it can be eaten warm or as a cold salad… It’s even delicious simply boiled and drizzled with extra-virgin olive oil and sprinkled with salt.
And this creamy, tomato-ey, bacon filled pasta is no exception. Delicious!
Ingredients:
- 3 tbsp vegetable oil
- 1 diced white onion
- 1 tbsp fresh garlic
- 3 tbsp Sofrito paste
- 2 cups cherry tomatoes – halved
- 1/2 tin Italian tomato mix
- 180g vegan bacon of choice – pan fried until cooked
- 1 can coconut cream
- Cooked pasta of choice
Method:
Add your onions to a frying pan with your oil of choice. Fry over medium heat until the onions are glossy. Add in the garlic and fry until fragrant – around 2 minutes. Add in the Sofrito paste and mix well. Add in the cherry tomatoes and fry until cooked & soft. Around 5-10 minutes. Add in the tinned tomato and bring to the boil. Stir through the cooked bacon and let simmer for a few minutes. Turn off the heat and add in the coconut cream. Mix well. Serve immediately over freshly cooked pasta and add fresh herbs.
