Date & Nut Muffins

This is perfect for weekend baking and some meal prep! Is there anything better than a warm freshly baked muffin! Especially when they are Mugg & Bean size!!!

Ingredients:

  • 2 1/2 cups flour
  • 1 cup rolled oats
  • 1 cup coconut sugar
  • 1 tbsp baking powder
  • pinch of salt
  • 1/2 cup vegetable oil
  • 2 cups plant-based milk
  • 1 tbsp vanilla essence
  • 1 tbsp cinnamon
  • 1 cup diced dates
  • 1 cup diced pecan nuts

Method:

Add the dry ingredients to a medium sized mixing bowl. In another bowl, mix the wet ingredients. Mix the wet ingredients into the dry ingredients, stir until a smooth batter is formed. Spoon the mixture into a greased muffin tray. Bake in a preheated oven (180*C) for 20-30 minutes – until a knife comes out clean.
