Festive Mint Brownie Trees

Let’s keep everything FESTIVE and FUN and these brownies are a real treat – they almost taste like chocolate candy canes! Yum!
Ingredients:
- 2 cups flour
- 1 cup sugar
- 1/2 cup chocolate chips
- 80g mint chocolate
- 3/4 cup cocoa powder
- 1 tbsp baking powder
- pinch of salt
- 1/2 cup vegetable oil
- 1 tbsp vanilla essence
- 1 tbsp peppermint essence
- 1 1/2 cups plant-based milk
Method:
Add the dry ingredients – flour, sugar, cacao powder, baking powder, salt, chocolate chips, broken mint chocolate – to a medium sized mixing bowl. In another bowl, mix the wet ingredients – oil, milk, flavouring. Mix the wet ingredients into the dry ingredients and mix until a smooth batter forms. Place in a well greased brownie tin – large rectangle works well. Bake in a preheated oven (180*C) for 20-25 minutes. Once cool, slice as desired.

Ingredients:
- 100g vegan butter
- 1 tbsp vanilla essence
- 2 cups icing sugar
- 1 – 2 drops food colouring
Method:
Place the butter in a large mixing bowl. Use an electric beater to beat until very light and fluffy. Add in the vanilla essence and combine. Gradually add the icing sugar and beat until the mixture is very pale and fluffy. Add the food colouring and beat until smooth and well combined.
Decorate as desires – but MAKE IT FESTIVE!
