Festive Pull Apart Bread

Ingredients:
- 1 tbsp yeast
- 1/2 cup sugar
- 2 cups water
- 1 tbsp salt
- 1/2 cup oil + 2 tbsp
- 8 cups flour
- 1/2 cup coconut sugar
- 1 tbsp cinnamon
- 1 tsp ginger
- 1 tsp nutmeg
- 1 tsp mixed spice
- 1 tsp pimento all spice
- 1 tsp cloves
- 100g dried cranberries
- Vegan margarine
- Almond milk to brush

Method:
Add the water to a large mixing bowl. Add in the yeast and stir. Add in the sugar and salt and give this a good mix. Add in the 1/2 cup oil. Mix well. Slowly add in the flour, mixing as you go. Once all the flour is added, knead the dough for around 10 minutes. Once a nice dough is formed, add in the 2 tbsps oil and knead the dough for a few minutes. Let this rise in a warm room for 1 hour. While the dough is rising, add your spices and coconut sugar together and mix well. Once the dough has risen, roll it out nice and thin. Spread on a layer of margarine and coat well with the sugar spice mix (leave a bit to sprinkle before baking). Sprinkle on the cranberries, making sure to evenly spread them out. Cut this into strips and roll each strip. Place these in a greased circular baking pan – leave a small gap between each roll as it will rise some more. Let this rise in a warm room for 1 hour. Brush the top with some almond milk and sprinkle on the remaining sugar spice mix. Bake in a preheated oven for around 40 minutes, turning the pan halfway. You will know it is done when it is golden brown and a knife comes out clean.
