Green Goddess Pasta

This is an avocado-hummus-type-pesto dressing for the pasta and it is oh so yummy! Served with some toasted pine nines and more avo because well #avoislife too.

Trust me – this is a dish you NEED to try!

Ingredients:

  • 50g fresh basil
  • Juice of 1/2 lemon
  • 1 whole avocado
  • 1/4 cup olive oil
  • 1/4 cup pine nuts
  • 1/4 cup grated vegan parmesan style cheese
  • 1 tbsp fresh garlic
  • salt & pepper to taste

Method:

Add all ingredients to a blender & blend until combined and smooth. If it is not blending well, add in some warm pasta water to help it blend – or add in some pasta water to water down the sauce and not make it so thick. Serve over freshly cooked pasta, with extra avo and pine nuts.
