Green Goodness Risotto
Sometimes you just need something comforting but also filled with all the greens you can find in your fridge. This risotto is creamy, and so delicious! You need to give it a try!
- 3 tbsp olive oil
- 1 tbsp fresh garlic
- 6 chopped baby leeks
- 1 cup risotto rice
- 3 1/2 cups vegetable stock
- 1 cup frozen peas
- salt & pepper
- 1/2 green bell pepper – diced
- 1/2 cup green beans – diced
- and ANY other green veg you like!
Cooking risotto is time consuming. But SO worth it. Do it properly and the creaminess of the risotto will blow you away!
Start with the oil, garlic and leeks in your pot. Let this cook off for a few minutes to get the leeks nice and fragrant. Add in the risotto rice and toast this until the risotto starts to become translucent. Add in the stock 1/2 a cup at a time and let it cook until all the stock is absorbed. Keep adding 1/2 cup of stock at a time and let it cook until all stock is absorbed before adding the next 1/2 cup. When you add in the last 1/2 cup, throw in your vegetables as well to cook until al dente. Enjoy with some fresh parsley!
