Homemade Babaganoush

I absolutely love a good dip! From tahini to hummus to guac to babaganoush to a bean dip, how can you go wrong! It makes such a quick and easy and nutritious lunch or snack as well! So it’s a winner winner in my books!
Ingredients:
- 750g aubergine, cubed
2-3 tbsp olive oil
1 tbsp Za’atar (check out @theoldstonemill )
2 tbsp tahini
1/4 lemon, juiced
1 tbsp fresh garlic
salt & pepper to taste
Method:
Roast the aubergine in 1 tbsp olive oil and the Za’atar. Once cooked. Let this cool. Add all the ingredients (roasted aubergine, tahnini, lemon juice, garlic, remaining olive oil and seasoning) to a blender and pulse until a smooth consistency is achieved. Serve with crackers.
