Is there anything more Christmassy than honey-glazed carrots? This is one of my favourite vegetables for this season! Crunchy, sweet, and oh so festive! I used vegan honey and it made the perfect vegan version of this classic side dish.
These are also so easy to make! Boil some carrots until cooked then make the honey sauce:
- 2 tbsp vegan butter
- 2 tbsp vegan honey
- squeeze lemon juice
- season with salt & pepper
- add fresh / dried parsley
Add this all onto the hot carrots and let it all melt together and combine. YUM!
