Low-carb Banana Cinnamon Pancakes

Is there such a thing as too many carbs – yes, sometimes there is… take it from a woman who just had some focaccia and some pizza! So here is something to indulge on that is slightly healthier for you! Enjoy!

Ingredients:

  • 1 1/4 cup macadamia nut flour
  • 1 tsp baking powder
  • Pinch of salt
  • 2 tbsp xylitol
  • 2 tbsp psyllium husk
  • 1 1/4 cup dairy-free milk
  • 2 tbsp coconut oil
  • 1 tbsp vanilla essence
  • 1 mashed banana
  • 1 tbsp cinnamon

Method:
Add the dry ingredients – flour, baking powder, salt, xylitol, psyllium husk, cinnamon – to a medium sized mixing bowl. In another bowl, mix the wet ingredients – milk, oil, vanilla essence, mashed banana. Mix the wet m ingredients into the dry ingredients, stir until a smooth batter is formed. Spoon the mixture onto a well- greased pan and cook until bubbles form on top, flip and cook on the other side. Serve with maple syrup, fresh berries and a icing sugar glaze.
