Meaty Chili Stuffed Peppers

Just picked a fresh bell pepper from my garden and dinner is served – a delicious, hearty vegan chilli served with rice, and some Chimichurri. I just discovered this sauce and I am OBSESSED! Chimichurri is made with chopped fresh parsley, oregano, garlic, olive oil, vinegar, and red pepper flakes or paprika. So full of flavour and totally delish as a sauce or to cook with!

Ingredients:

  • 1 tbsp oil
  • 1 onion, diced
  • 3 tbsp Chimichurri sauce
  • 350g vegan mince (soya meat)
  • 1-2 grated carrots
  • 1 tin chopped tomatoes
  • 1 tbsp sugar
  • chilli & paprika to taste
  • 1 can whole kernel
  • 1 tin kidney beans

Method:

Add your oil to a medium sized pot. Add in your diced onion and let this cook for a few minutes to get glossy. Add in your Chimichurri sauce and fry until fragrant. Add in your vegan mince and fry until cooked. Add in the carrots, the tinned tomatoes, sugar and spices. Bring this to the boil. Add in the corn and the beans and let this simmer for around 10 minutes. Serve with rice, and a fresh salad and some of the good stuff – Chimichurri. I served mine in an uncooked bell pepper – and it was so fresh & delicious and a perfect accompaniment to the meal.
