Mini Peach Pies

Ingredients:

  • store bought vegan pastry – look in the frozen isle
  • 2 diced peaches
  • Juice of 1/4 – 1/2 lemon
  • 1/2 cup coconut sugar
  • 1/2 cup flaked almonds
  • 1 tsp cinnamon
  • 1/4 cup boiling water

Method:

Cook your peaches in the lemon juice, coconut sugar, cinnamon and water until soft. Stir in the flaked almonds. Add the pastry to desired baking dish (to make mini pies, use a muffin tray!). Spoon in some peaches mixture. Add some pastry to the top. Brush on some almond milk, sprinkle on some cinnamon and sugar as well for an extra crunch. Bake in a preheated oven (180°C) for around 20 minutes until golden brown on top.
