NUTTY GRANOLA

Ingredients:

  • 1 1/2 cup rolled oats
  • 1/2 cup almonds
  • 1/2 cup pecan nuts
  • 1 tbsp cinnamon
  • 1 pinch salt
  • 1 heaping tbsp tahini
  • 1 tsp vanilla essence
  • 1/4 cup vegan honey
  • 1 cup dried cranberries

Method:

Add 3/4 cup rolled oats to a high speed blender, and blitz slightly to form a course oat flour. Do the same for your almonds and pecan nuts – use a high speed blender to break the nuts up into smaller pieces but leave some larger pieces as well. Add all ingredients (except the dried cranberries) to a large mixing bowl. Combine well and make sure all the dry ingredients are evenly coated with the wet ingredients. Place this on a greased baking tray and bake in a preheated oven (180*C) for around 20 minutes until the granola is toasted and a golden brown colour. Once cooled, stir through the dried cranberries. Serve with plant-based yoghurt.
