Oat Bran Breakfast Muffins

Breakfast meal prep made easy – quick, easy and yummy for breakfast on the go. These muffins are sweet, coconutty and filled with fruit – YUM! Perfect for your morning coffee fix!

Ingredients:

  • 1 cup oats blitzed to form a flour
  • 1/2 cup rolled oats
  • 3/4 cup flour
  • 1/2 cup desiccated coconut
  • 1/2 cup coconut sugar
  • pinch of salt
  • 1 tbsp baking powder
  • 1 cup sultanas
  • 1/2 cup vegan honey
  • 1 tbsp vanilla essence
  • 1/4 cup vegetable oil
  • 1 cup plant-based milk
  • Optional – vegan granola to top muffins

Method:

Mix everything together. Sprinkle some vegan granola on top for an extra crunch! And bake at 180°C for around 30 minutes until golden brown and cooked through.
