One Pan Chicken Orzo
A one pan dish is always a winner in my books – especially one as delicious as this one. Creamy. Filling. Delish. Yum. I could go on and on!
- olive oil
- 300g vegan chicken fillets of your choice
- 1 onion diced
- 1 tomato diced
- 1 bell pepper diced
- 1 tin tomato & onion mix
- Italian seasoning
- 1 cup Orzo pasta
- 1 – 1 1/2 cups vegan chicken stock
- optional – 2 heaping tbsp coconut yoghurt for creaminess
Cook your veg and chicken in the oil. Add in the tinned tomato, Italian seasoning and Orzo pasta. Stir well. Add in the stock and let this simmer for around 15 minutes. Stir often. Stir through some coconut yoghurt. Serve with fresh herbs.
