One-pot Mushroom Pasta

Ingredients:

  • 2 tbsp vegan butter/margarine
  • 1 tsp fresh garlic
  • 1/2 diced red onion
  • 2 tbsp flour
  • 3/4 cup dairy-free milk
  • 2 cups vegetable stock
  • 2 cups macaroni pasta
  • 250g chopped button mushrooms
  • To serve: Salt, Pepper, Fresh chives & Lemon wedges

Method:

Add the butter, garlic and red onion to a medium sized pot. Fry the onions until they are glossy. Add in the flour and mix to form a paste. Add in the milk, stock and pasta. Stir well. Add the mushrooms and bring to the boil. Once boiling, cover and let this simmer for 20 minutes – stirring occasionally. Take the lid off for the last 5 minutes to let the sauce thicken nicely. Serve with fresh chives, salt & pepper to taste and lemon wedges.
