Orange Cake

My absolute favourite cakes have to be anything CITRUSY – an orange cake, a lemon drizzle cake, an orange pound cake… ohhhh the list goes on and on. And this little four layers orange cake with cream cheese icing from Pillsbury Baking is top notch!

Ingredients:

  • 2 cups flour
  • 1 cup light brown sugar
  • 1 tbsp baking powder
  • pinch of salt
  • zest of 1 orange
  • juice of 2 oranges
  • 1/4 cup vegetable oil
  • 3/4 cup plant-based milk
  • 1 tbsp vanilla essence
  • vegan cream cheese icing
  • candied citrus peel for décor

Method:

Mix all dry ingredients together – in a large mixing bowl. Mix wet ingredients together – in another mixing bowl. Pour the wet ingredients into the dry ingredients. Make sure everything is well combined but do not over mix. Spoon into a greased cake tin (this is enough batter for one normal sized layer) and bake for 45-50 minutes in a pre-heated oven (180*C), or until a knife comes out clean. Once cool, add some vegan cream cheese icing and candied citrus peel.
