Pear & Almond Baked Pudding

Okay so this may not look like much but trust me when I say it is delicious! Sweet, sticky and such a treat and so easy to make as well!

Ingredients:

  • 1/4 cup flaked almonds
  • 1/2 cup flour
  • 1/2 cup caster sugar
  • 1 tbsp vanilla essence
  • 1/4 cup vegetable oil
  • 1/4 cup plant-based milk
  • 2 tbsp apricot jam
  • 1 tin pears – diced

Topping Ingredients:

  • a few spoons apricot jam
  • 1/2 cup oats
  • 1/4 cup flaked almonds
  • 1/4 cup coconut sugar
  • cinnamon

Method:

Mix together the ingredients to form a cake consistency. Add to desired baking dish. I made 3 ramekins. Add toppings – just sprinkle on – get nice and messy. Bake in a preheated oven (180°C) for around 30-40 minutes until a skewer comes out clean.

Enjoy with vegan vanilla ice-cream – perfect!
