Pear & Kiwi Jam

Is there ANYTHING better than jam on toast? Maybe only HOMEMADE jam on toast. Warm toast. Then the jam can melt into it… and if you aren’t drooling – how are you even human?
Ingredients:
- 4 pears – peeled and diced
- juice of 1/4 lemon
- 1/4 cup sugar
- 2 kiwis – peeled and diced
- 1/4 cup vegan honey
- 1-2 tsp chia seeds
Method:
Add your pears, lemon juice and sugar into an airtight container and let stew for a few hours – preferably overnight. Once ready, add this to a small pot and bring to the boil. Let this simmer for around 10 minutes to let the pears soften. Add in the kiwis and honey. Cook for a further 10-15 minutes until you can mash the fruit into a soft mixture. Take this off the heat and stir in the chia seeds. Close the pot and let the chia seeds absorb the remaining liquid. Store in an airtight container in the fridge for up to a week – if it can last that long!
