Plum & Apple Crumble

Probably close to one of the best crumbles I have ever made – sweet, juicy plums with crisp, tart green apples cooked to perfection with a crumbly shortcrust base and cinnamon sugar crumble on top – BEYOND YUM.

Pastry Ingredients:

  • 300g flour
  • 1 tsp baking powder
  • pinch of salt
  • 150g vegan butter
  • 100ml iced water
  • 1 tsp vanilla essence
  • 70g icing sugar

Fruit Mixture Ingredients:

  • 2 green apples diced
  • 4 plums diced
  • 1/2 cup vegan honey
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • pinch of mixed spice
  • 1/2 cup raisins

Crumble Ingredients:

  • 2 1/2 tbsp butter
  • 1/2 cup sugar
  • 1 tbsp cinnamon
  • 1/2 cup flour
  • 1 tsp vanilla essence

Method:

Make the pastry – Sieve all the dry ingredients together – the flour, icing sugar, baking powder and salt. Put this mixture into a large mixing bowl. Keeping about 3/4 of a cup of this mixture to one side. Add the margarine – mix this until it
resembled fine bread crumbs. Add vanilla essence to the ice cold water. Slowly add to the dry ingredients tablespoon
by tablespoon. Once your dough looks a bit sticky (you may not need all the water), add the 3/4 cup of flour you put to one side and mix. Once the dough leaves the sides of the bowl, you know it is ready. Let the dough sit in the fridge for about 3 hours before using it.

Make the filling – Add all fruit mix ingredients to a small pot, bring this to the boil and let it simmer until the fruit is soft. Set this to one side.

Add the pastry to a greased baking pan. Blind bake the pastry base until lightly cooked. Add the fruit mix. Add all the crumble ingredients to a bowl, mix together until it forms a bread crumb like texture. Sprinkle over the tart. Bake for around 30 minutes until golden brown.
