VERY VEGGIE PASTA SALAD
FEATURING PICK N PAY RED LENTIL PENNE PASTA

  • 100g Pick n Pay Livewell red lentil penne pasta
  • 1 cup diced mixed bell peppers
  • 1 cup diced cherry tomatoes
  • 1/2 cup diced sugar snap peas
  • 1/2 cup diced cucumber
  • 1/2 cup vegan mayo
  • 3 tbsp mild chunky salsa
  • Salt & Pepper to taste
  • Fresh lettuce

Cook the pasta as per the package instructions. Drain and set to one side to cool. Add all ingredients into a large mixing bowl. Mix well and ensure that the pasta is coated well. Serve on a bed of fresh lettuce.
