VERY VEGGIE PASTA SALAD
FEATURING PICK N PAY RED LENTIL PENNE PASTA
- 100g Pick n Pay Livewell red lentil penne pasta
- 1 cup diced mixed bell peppers
- 1 cup diced cherry tomatoes
- 1/2 cup diced sugar snap peas
- 1/2 cup diced cucumber
- 1/2 cup vegan mayo
- 3 tbsp mild chunky salsa
- Salt & Pepper to taste
- Fresh lettuce
Cook the pasta as per the package instructions. Drain and set to one side to cool. Add all ingredients into a large mixing bowl. Mix well and ensure that the pasta is coated well. Serve on a bed of fresh lettuce.
