Potato & Leek Soup

Ingredients:
- 3 tbsp olive oil
- 1 diced onion
- 400g diced leeks
- 1 tbsp fresh garlic
- 700g diced potatoes
- 1 litre vegan chicken stock – Ina Paarman chicken stock powder is vegan
- 1 tsp sage
- 1 tin butter beans
- 1/2 cup coconut milk
Method:
Add your oil, onion & leeks to a medium sized pot. Fry this until the onions are glossy and fragrant. Add in the garlic and fry for a further 2 minutes. Add in the potatoes, and the stock. Give this a good stir. Add in the sage. Bring this to the boil and allow to simmer for around 30 minutes until the potatoes soften. Add in the tin of butter beans and the coconut milk. Boil for 5 more minutes. Blend until smooth.
