Quick & Easy Samosas

There is nothing better than a crunchy crisp freshly made samosa! And I have just the hack for you – I have struggled to make samosas at home but these are a winner! Light, crisp, crunchy and packed with veg – the secret is using phyllo pastry!
Ingredients:
- vegetable oil
- 1 tbsp garlic
- 1 onion diced
- 1 tbsp mild curry powder
- 250g frozen mixed vegetables
- 250g cooked & cubed potatoes
- 1/4 cup chutney
- store bought phyllo pastry
- Optional – sesame seeds
Method:
Add some vegetable oil to a small pan. Fry your garlic, onions and curry powder until fragrant. Add in the mixed vegetables and cook until defrosted. Add in the potatoes and stir. Let this cook for a few minutes. Stir through the chutney.
Cut a few sheets of phyllo pastry into squares – a few sheets layered on top of each other for one samosa. Add some curry mixture onto the middle of the pastry sheet. Fold one corner to the opposite corner to form a triangle. Use a dab of water to seal the pastry. Brush with some more vegetable oil and sprinkle sesame seeds on top. Bake until golden brown.
