Raspberry Cookies

Did you know that you can replace eggs in any recipe with mashed fruit? And it works like a charm! And these Raspberry & Vegan White Chocolate cookies are to die for! The white chocolate I used is more of a caramel chocolate – can’t wait until we get real vegan white chocolate in SA…

Ingredients:

  • 120g mashed raspberries
  • 100g vegan butter
  • 200g white sugar
  • 1 tbsp vanilla essence
  • 350g cake flour
  • pinch of salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 120g vegan chocolate of choice

Method:

Cream together the raspberries, butter, sugar & vanilla essence. Slowly add the dry ingredients to form a batter. Add in your vegan chocolate. Bake for 12-15 mins in a preheated oven (180°C). Remember cookies harden as they cool.
