One of the main reasons to add Rooibos to your marinade is that it’s rich in antioxidants, which are good for heart health as well as many more added benefits as well!

  • 1/2 small onion – diced
  • 1 small chili – diced
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • 2 Laager Rooibos tea bags
  • 1 tsp fresh garlic
  • 2-3 tbsp boiling water
  • 1/4 cup vegetable oil
  • 1/4 cup tomato sauce
  • 1 tbsp soy sauce

Mix all the spice ingredients – onion, chili, thyme, rosemary, rooibos tea, garlic – with a pestle and mortar until crushed and mixed well. Add in the boiling water and mix. Set this aside to steep for around 20 minutes. Combine all the sauce ingredients – oil, tomato sauce, soy sauce – in a medium sized mixing bowl and stir well. Add in the spice ingredients and make sure to mix everything together nicely to ensure the oil doesn’t separate. Use it to glaze the mock-meat or vegetables of your choice over the braai.

You can even use extra marinade on your cooked meat/vegetables for extra flavour.
