Savoury Seed Crackers

I have been wanting to make my own seed crackers for a while now and they are actually a lot simpler than you think! Plus they are low-carb, gluten-free and vegan… and tasty! So a crowd pleaser for all.
Ingredients:
- 1 cup sunflower seeds
- 5 tbsp flax seeds
- 1/2 cup sesame seeds
- 1 tbsp pumpkin seeds
- 1 rounded tbsp psyllium husk
- 2 tsp seasoning of choice, you can customise this to taste, chili, garlic, paprika, rosemary & olive seasoning – all options
- 1 cup water
Method:
Mix all the ingredients together. Allow mixture to stand for 15 minutes to allow the psyllium husk to absorb the liquid and form a soft mixture. Roll out nice and thin (suggested to roll between silicone mats or baking paper as the mixture is sticky). Place on 2 baking trays, and score the cracker shapes to make it easier to break them after baking. Bake for 1 hour 15 minutes at 160°C. Cool in oven (turn the oven off and leave the crackers in for a few hours) to allow them to get extra crispy.
