Spicy Stuffed Aubergine

A filling, delicious and nutritious dinner option. I honestly love stuffing foods! Stuffed peppers – yes please; stuffed tomatoes – yasssss; and now stuffed aubergine – too delicious! And so easy!!! Let’s get into it!


  • 1-2 very large aubergines, cut down the middle and insides taken out
  • olive oil
  • 1 red onion, diced
  • 1 tsp fresh garlic
  • 1-2 vegan spiced sausages
  • 1 tomato, diced
  • 1/2 red pepper, diced
  • 1 tsp chilli flakes (optional)
  • 1/2 cup passata tomato sauce
  • 1 tsp oregano
  • 1 tsp sugar
  • Optional to top: breadcrumbs & dried parsley


Bake the aubergine shells under a grill for 5 minutes until they are just soft. Set this to one side. In a large frying pan, add the oil, onion and garlic. Fry this until the onions are glossy. Add in the sausages and let them cook. Once they are nearly cooked, add in the tomato, and red pepper and you can also add in the inside of the aubergine (diced into smaller pieces). Cook for 5 minutes. Add in the passata. Give this a good stir. Add in the seasoning – chili flakes, oregano and sugar. Bring this to the boil and simmer for 10-15 minutes. Spoon this mixture into the aubergine shells (you may have too much – so eat some too for quality control). Top with some breadcrumbs and dried parsley. Grill for around 10 minutes until the breadcrumbs are toasted.
