Strawberry Mousse

This mousse is sweet, tangy, light and of course oh so fluffy! A real show stopper! Perfect for something light and fresh after your meal.
Ingredients:
- 400g strawberries
- 3 tbsp vegan cream of choice (I used Orley Whip)
- 1 tin aquafaba (juice from a tin of chickpeas)
- 1 tsp cream of tartar
- 1/2 cup icing sugar
- Optional to serve: vegan cream of choice – whipped & fresh berries
Method:
Blend together the strawberries and cream until smooth. Set this to one side. Add the aquafaba and the cream of tartar to a medium sized mixing bowl and whisk until light and fluffy. Slowly add in the icing sugar while continually whisking. Once glossy and almost like a meringue texture, gently stir in the strawberry mixture. You can whisk some more to ensure the mixture stays light and fluffy. Decant into 4-6 glass bowls and set in the fridge for a few hours. Serve with whipped cream and more berries.
