Sweet Potato Cinnamon Rolls

Okay don’t knock these until you try them because WOW these are some of the best vegan cinnamon rolls I have ever made and these are SO easy and so quick! You can even use left over sweet potato from dinner! Winner!

Ingredients:

  • 400g puff pastry (most store bought frozen brands are vegan-friendly)
  • 500g sweet potato
  • 1 tbsp cinnamon
  • 6 tbsp brown treacle sugar
  • 1/4 cup chopped pecan nuts
  • splash of plant-based milk
  • cinnamon sugar sprinkle

Method:

Make sure to defrost your pastry well. Steam the sweet potato until soft, and then mash into a smooth mixture. Roll out the puff pastry and spread the sweet potato on top. Sprinkle on the cinnamon, sugar and chopped nuts. Roll into a sausage shape and cut into thin slices. Brush with milk and sprinkle cinnamon sugar on top. Bake in a preheated oven (180*C) for around 30 minutes or until the pastry is golden brown.

Enjoy warm with an icing sugar glaze.
