Sweet Potato Gnocchi
Sometimes all you want is a delicious comforting bowl of pan-fried gnocchi – crisp on the outside, soft and fluffy on the inside and smothered in a buttery coating and vegan cheese. Delicious!
- 600g sweet potato, boiled & mashed
- 1/4 cup flour
- pinch of salt
- 1 tbsp fresh garlic
- 1 tbsp dried oregano
- For the pan-fried sauce: 3 tbsp good quality vegan butter, & 1 tsp dried sage
- To serve: fresh chives & grated vegan mozzarella
Add the sweet potato, flour, salt, garlic & oregano to a bowl. Mix together. You should get a dough. Shape the gnocchi. Pan fry in the butter and sage until crisp and brown. Serve with grated mozzarella and fresh chives.
