Sweet Potato & Spinach Pancakes

It is a breakfast for dinner kind of recipe and what better than savoury pancakes smeared with vegan butter, some cheddar slices and fresh chives. Full of flavour and just hitting the spot!

Ingredients:

  • 350g sweet potato – cooked
  • 150g frozen spinach – defrosted (or fresh spinach but only around 1-2 handfulls)
  • 1 cup flour
  • 1 tbsp baking powder
  • pinch of salt
  • 1 cup plant-based milk
  • 2 tbsp vegetable oil
  • season with salt & pepper to taste

Method:

Mix everything together to form a smooth batter. Fry over medium heat until bubbles form, flip and cook on the other side. Enjoy with vegan butter & vegan cheddar cheese.
