Sweetcorn Muffins

A little bit of a meal prep for you – I have been loving muffins lately and there is nothing better than a sweetcorn muffin – light, fluffy and oh so delicious! The corn makes the muffins naturally sweet and full of flavour! The perfect breakfast/snack for the upcoming week!

Ingredients:

  • 2 cups flour
  • pinch of salt
  • 1 tbsp baking powder
  • 1/2 cup sugar
  • 1 1/2 @alpro soya milk @danonesouthafrica
  • 1/4 cup oil
  • 1 tin whole kernel

Add the dry ingredients to a medium sized mixing bowl. In another bowl, mix the wet ingredients. Mix the wet ingredients into the dry ingredients, stir until a smooth batter is formed. Spoon the mixture into a greased muffin tray. Bake in a preheated oven (180*C) for 20-30 minutes – until a knife comes out clean.
