Let’s make chick’n & mushroom pies with Urban Vegan

Urban Vegan is a wide range of delicious, artisanal vegan foods that are stocked throughout South Africa. The brand was started by two local vegans who noticed a gap in South Africa’s food market. They wanted to create wholesome vegan convenience food that was delicious in taste while also being healthy.
The Urban Vegan brand shows that a plant-based diet, free of refined foods and animal products, is the way to live a long, healthy and happy life.
It’s your choice to give your body a chance to live a long and healthy life.
A lunchbox is not the same without a pie – delicious, nutritious and filling!
Ingredients:
- 1 roll store bought puff pastry
- 3 Tbsp vegetable oil
- 1 Tbsp fresh garlic
- 2 diced white onions
- 250g sliced button mushrooms
- 2 Urban Vegan Prime Chick’n Burgers, diced
- 1/2 cup vegan stock
- 1 Tbsp flour
Method:
Add the oil to a large frying pan. Add the onion and cook this until the onions are glossy. Add the garlic and fry for a few minutes. Add the diced chicken burgers and cook for a further few minutes stirring occasionally. Add the mushrooms. Give the mixture a good stir. Close the lid and let this cook for 5 minutes to soften the mushrooms. Add the stock and bring to the boil. Let this simmer for a few minutes. Add the flour and stir continuously for the sauce to thicken. Once thick, set to one side. Make sure to grease your muffin tin well. Add a layer of pastry to each muffin tin. Spoon some chick’n & mushroom mixture on top of the pastry. Add some pasty to the top of the mixture. Cut a small hole on top of the pastry to let the steam out while cooking. Brush each top with some plant-based milk. Cook in a preheated oven (180*C) for around 30-45 minutes or until the pies are golden on top.
