Vegan Beef Stew

Ingredients:
- vegetable oil
- 1 diced onion
- 1 tbsp fresh garlic
- 4 large carrots – diced
- 200g green beans – halved
- 1 tbsp BBQ spice
- 1 can chopped tomatoes
- 1/4 cup vegetable (or vegan beef) stock
- 1/4 cup chutney
- 1/4-1/2 cup vegan red wine
- 400g vegan beef replacement
Method:
Add the onions and garlic to a pan with some vegetable oil. Fry until the onions are glossy. Add in the carrots & green beans. Add in the BBQ spice and fry until the veg soften. Add in the chopped tomatoes and the stock. Let this simmer for around 5 minutes. Add in the chutney and red wine. Simmer for 20 minutes. In a separate pan, cook your vegan ‘beef’. Add this to your veg mixture and bring to the boil. Simmer until the sauce gets thicker. Serve over cooked rice.
