Vegan ‘Beef’ Stroganoff

Ingredients:
- 1 diced onion
- vegetable oil
- 1 tbsp fresh garlic
- 300g vegan beef style strips
- 250g diced mushrooms
- 1 diced bell pepper
- 100g peas
- 100g diced green beans
- 2 tbsp vegan butter
- 1 tbsp flour
- 100ml vegetable stock
- 1 tsp mustard
- 1/2 cup roasted plant-based milk
- 150g coconut cream
Method:
Add the diced onion & garlic to a medium-sized pan with the vegetable oil. Fry until the onions are glossy. Add in your ‘beef’ strips, green beans & diced bell pepper. Fry this for around 5-10 minutes for the veg to start cooking. Add in the vegan butter and let it melt. Coat the mixture in the flour. Add in the vegetable stock, milk & mustard. Bring this to the boil. Add in the mushrooms & peas. Let this simmer for 15 minutes. Stir through the coconut cream . Let this cook until the sauce is nice and thick.
Serve over rice with fresh herbs.
