Vegan Chili Non Carne

There is nothing greater than a hearty meal and trust me this one hits the spot. Packed with veg, spices, and protein – it’s a winner for me. Also don’t skimp on the beans folks – they make the dish!!
Ingredients:
- vegetable oil
- 1 – 2 chopped onions
- 1 – 2 chopped carrots
- 2 chopped tomatoes
- 2 chopped stalks celery
- 1 tbsp fresh garlic
- 2-3 heaped tbsp harissa paste
- chopped fresh chili (optional)
- 300g vegan mince of choice
- 2 tbsp paprika
- 1 tin tomato & onion mix
- 1 tbsp sugar
- 1 tbsp mixed herbs
- 1 tin mixed beans
Method:
Fry the onions until glossy. Add in your chopped vegetables & garlic. Let this sweat for around 5 minutes for the veg to soften. Add in your vegan mince. Fry for a few minutes. Add in your spices – harissa, chili & paprika. Fry to get nice and fragrant. Let this sweat for a further 5 minutes. Add in the tomato mix, sugar, and herbs. Bring this to the boil and simmer for 15 minutes. Stir through your tinned beans. Serve over rice.
