Vegan Chocolate Mousse Tarts

This is the perfect festive dessert – if you are a CHOC-O-HOLIC like me. Creamy, thick, chocolatey mousse in buttery chocolate pastry – I am in heaven!

Pastry Ingredients:

  • 150g vegan butter
  • 50g cocoa powder
  • 250g flour
  • 65g icing sugar
  • 1 tsp baking powder
  • pinch of salt
  • 1 tbsp vanilla essence
  • 100ml iced water

Pastry Method:

Sieve all the dry ingredients together – the flour, cocoa powder, icing sugar, baking powder and salt. Put this mixture into a large mixing bowl. Keeping about 3/4 of a cup of this mixture to one side. Add the butter – mix this until it resembled fine bread crumbs. Add vanilla essence to the ice cold water. Slowly add to the dry ingredients tablespoon by tablespoon. Once your dough looks a bit sticky (you may not need all the water), add the 3/4 cup of flour you put to one side and mix. Once the dough leaves the sides of the bowl, you know it is ready. Let the dough sit in the fridge for about 1 hour before using it. Preheat the oven to 180*C. Assemble the pastry in a baking tray (cupcake tray). Bake for around 20-30 minutes. They will puff up a bit, but just press the pastry cases down before cooling.

Chocolate Mousse Ingredients:

  • 1 can coconut cream
  • 1/4 cup cocoa powder
  • 1/4 – 1/2 cup melted Nova Choc-oh-late dark chocolate baking buttons
  • 4 tbsp icing sugar
  • 1 tbsp vanilla essence
  • 2 tbsp nut butter

Chocolate Mousse Method:

Blend all ingredients together until combined and smooth. Set in the fridge for around 1 hour. Give it a good stir – if nice and creamy and thick, it is ready to pipe into the chocolate pastry cases.

Decorate as desired – but always make it festive!
