Vegan Lentil Christmas Stuffing Balls

There is nothing better than stuffing balls for Christmas Dinner! And even better when made with my some of my favourite ingredients – these taste like Christmas and are so delicious with some vegetable gravy!
Ingredients:
- 200g crumbled seeded bread
- 1 tin lentils – drained
- 2 tbsp vegan beef flavoured stock powder
- 1 tbsp fresh garlic
- 1 tbsp mixed herbs
- 1 tsp fresh parsley
- 4 tbsp fruit mince
- 2 tbsp brandy
- 2 tbsp psyllium husk
Method:
Weigh 200g bread – crumble this with your hands. Add in your tin of lentils and combine well. Add in all the spices (stock powder, garlic, mixed herbs, parsley, fruit mince & brandy) – mix to incorporate all the flavours. Add in the psyllium husk – mix. Let this sit for 10 minutes for the psyllium husk to set. Roll into balls and bake in a preheated oven (180*C) for around 20-30 minutes until firm to the touch and crispy on the outside. Serve with gravy.
