Vegan Paella

Ingredients:

  • 2 tbsp vegetable oil
  • 1 diced onion
  • 1 tbsp fresh garlic
  • 8 spicy vegan sausages
  • 1 cup mixed corn and peas
  • 1 diced bell pepper
  • 2 – 3 cups rice cooked in vegan chicken flavoured stock
  • Toppings: 250g cooked vegan style prawns, lemon wedges & fresh parsley

Method:

In a large pan, add the oil and onions. Fry until translucent. Add in the garlic, sausages, corn, peas & bell pepper. Let this fry off for 10 minutes. Add in the rice mixture and mix well. Let this simmer for 5 minutes for the flavours to deepen. Serve immediately with vegan prawns, fresh lemon wedges and fresh parsley.
