Vegan Paella

Ingredients:
- 2 tbsp vegetable oil
- 1 diced onion
- 1 tbsp fresh garlic
- 8 spicy vegan sausages
- 1 cup mixed corn and peas
- 1 diced bell pepper
- 2 – 3 cups rice cooked in vegan chicken flavoured stock
- Toppings: 250g cooked vegan style prawns, lemon wedges & fresh parsley
Method:
In a large pan, add the oil and onions. Fry until translucent. Add in the garlic, sausages, corn, peas & bell pepper. Let this fry off for 10 minutes. Add in the rice mixture and mix well. Let this simmer for 5 minutes for the flavours to deepen. Serve immediately with vegan prawns, fresh lemon wedges and fresh parsley.
