Vegan Rock Buns

Okay… hold the phone… anyone else love this classic! It took me a few tries but YES I got it. And it took me right back to my childhood. Buttery, sweet and stuffed with currants! Yes please!
Ingredients:
- 1/2 cup vegan margarine/butter
- 1/4 cup white sugar
- 3 tbsp plant-based milk
- 1 tbsp vanilla essence
- 1 1/2 cups cake flour
- 1/2 tsp baking powder
- 1/2 – 3/4 cup dried currants
Method:
Beat your vegan margarine/butter until light and fluffy. Add in the sugar and beat. Add in the milk and the vanilla essence and slowly fold this in. In a separate bowl, combine all the dry ingredients (flour, baking powder and currants). Add half of the mixture to the butter mixture and beat. Once combined, repeat with the other half of the mixture. You want a dough-like consistency similar to a scone. Scoop desired amount onto a baking tray (remember they do rise a bit but not much). OPTIONAL – Brush with some more plant-based milk and sprinkle some cinnamon sugar on top. Bake in a preheated oven (180*C) for around 25-30 minutes. You want them to be crisp on the outside and soft and fluffy on the inside.
