Vegan Spaghetti Bolognese

My ULTIMATE comfort meal (since I could eat solids) has to be my mom’s spaghetti bolognese. I used to request it every birthday meal from the days it was called “basghetti” to the days it’s now a vegan spag bol. So let’s get cooking!
Ingredients:
- oil of choice
- 1 large onion, diced
- 2 large tomatoes, diced
- 1 tbsp fresh garlic
- 1 tbsp Italian herbs
- 300g vegan mince of choice (even cooked lentils would work well)
- 1 tbsp BBQ spice mix
- 400g tinned tomatoes
- 1 tsp sugar
- 1 tbsp oregano
- optional but highly recommend – dollop of chutney
Method:
Add your oil & onion to a medium sized frying pan. Once the onions are glossy, add in the tomatoes, Italian herbs and garlic. Fry until the tomatoes are soft. Add in the beyond mean and your BBQ spice mix. Fry until the meat has browned. Add in the tinned tomatoes, sugar and oregano. Stir. Bring to the boil and simmer for around 5-10 minutes. Stir through some chutney. *chefs kiss* Serve with a sharp cheese like vegan parmesan or cheddar and fresh basil leaves.
