Vegetable Cottage Pie

Cottage pie is an ultimate comfort for me! This veggie packed cottage pie is topped with some creamy vegan mash – perfection!

Ingredients:

  • Vegetable Oil
  • 1 small butternut – cubed
  • salt & pepper
  • 2 leeks – diced
  • 1/4 red onion – diced
  • 1 tbsp fresh garlic
  • 1 tbsp mixed herbs
  • 2 tomatoes – diced
  • 1 bell pepper – diced
  • 1 can borlotti beans (or any bean of choice)
  • 2 – 3 sweet potatoes – diced
  • 2 tbsp vegan butter / margarine
  • 1 tbsp aromat seasoning
  • Vegan Parmesan Cheese (optional)

Method:

Roast the butter nut in some oil, salt & pepper until tender. Boil the sweet potatoes in a bit of salted water until soft. Set this to side. Add some oil to a medium sized pot. Add in the leeks and onion. Let this fry off until fragrant. Add in the garlic and the herbs. Fry for a few minutes. Add in the tomatoes and the bell pepper. Let this cook until tender. Add in the cooked butternut and the tin of beans. Let this cook for around 10 minutes to thicken up nicely. Add the cooked sweet potatoes to a bowl with the butter, aromat and parmesan cheese. Mash until creamy. Assemble the cottage pie – veg at the bottom and mash on top – and add a sprinkle if parmesan on top. Grill for 10 minutes to get crispy on top. Enjoy with fresh herbs.
